On the palate, it is characteristically dry and crisp with an accent of apples, caramel, toffee, and yeasty character that blends exquisitely with a persistent almond
finish. Served at 100C-120C, it makes a marvelous pairing with oysters, olives, salads, and Parmesan cheese.
Acclaimed oloroso DO Jerez Sherry made using the traditional criaderas and soleras system, with a long period of oak ageing. This dark amber hued sherry has pronounced aromas of hazelnuts and dried figs. The palate is dry and smooth, with flavours of cooked nuts, dried oranges, and dates and a fine balance that can only come with careful oxidative ageing. The finish is complex and lingering, and we enjoy sipping this sherry at room
temperature over extended periods both as an aperitif and with desserts.
Their brut nature reserva is a product of careful production and extended lees ageing. It is bright yellow with fine, constant bubbles. The nose and palate are balanced with crisp
fruitiness of peaches and green apples in perfect harmony with delicate toasty aromas from lees. Elegant almond notes dominate the long finish.
Enjoy this wine at 60C-80C on its own, with sautéed vegetables or with sea food.
This brut rosé is made by the saignée method, where pink coloured juice bleeds out from red vats to result in a bright cherry-pink wine with a lively raspberry scented effervescence. The long aging on lees adds toasty notes.
Flavours of wild strawberries, silky tannins and crisp acidity make this a wine to enjoy at 80C-100C with light meals.
Protos Roble is made from manually harvested grapes control-fermented and aged in French and American barrels. Aromas of red and black fruit stand out, accompanied by
sweet spice and toasty notes. The palate is marked by a good fruity structure, balanced oak, and velvety tannins. Pairs well with roast meats, and tomato-based recipes.
The nose is a perfect blend of citrus, green apple, and fennel. Tropical fruits and Verdejo grape’s typical acidity with structure from lees aging on the palate makes this wine a consumer favourite. Serve chilled. Enjoy its long finish with salads, sushi, paella, and seafood.
Candado’ is the Spanish word for ‘padlock’, and each bottle is sealed with one as per tradition to prevent anyone from stealing a glass. Pedro Ximénez grapes are picked
extra ripe and sundried till they become raisins. The wine is then aged under the soleras and criaderas system which gives it a very dark colour and intense aromas of raisins,
dried figs, and dates with subtle hints of coffee. On the palate it is luscious, and sweet, which makes it an excellent partner for desserts, vanilla ice cream and surprisingly, blue cheese. Enjoy at 120C-140C.
